Time Flies when……

…. you are working hard! It’s now over 3 years ago that I took a deep breath and was handed the keys to the Tickled Trout. The pub was unloved, and far from what it is today – it clearly needed investment (it was beyond a good clean!).  The pub had sentimental value to us – we grew up in the village.  Rachel had her 18th birthday party here and celebrated her grandparents golden wedding anniversary among many other family occasions. I also believed she sneaked in to ‘Nicky’s’ nightclub here many moons ago! The 16 week transformation was intensely busy but I am so glad we bit the bullet and turned the pub round into something I am immensely proud of. Many of the team who started with us are still with us and it has been wonderful to see them develop their skills and confidence.

Developing a first-class front of house team and observing young chefs follow their passion is what I aspired to. In our first year we won the Reader’s choice for Westside and Southside, in 2016, we won Gastro pub of the year last year and this year we won this award again as well as our talented chef, Dave Cockerill winning young chef of the year in a cook off between other top young chefs in the area – what a brilliant achievement.  We have evolved so much in 3 years and we constantly push ourselves to develop exciting new dishes for our something special menu.  Receiving great feedback means a lot to the team and we love it when our regulars try the new dishes.  It does take time to get it right and a new idea may take weeks to develop and refine – we want nothing but the best reaching the menu here!
