Celebrating local produce

You really don’t need to look far afield to find fabulous produce – it really is right on my doorstep here.  Our ethos at the Tickled Trout is always to start with the best of the best so a lot of time and effort is given to sourcing great ingredients.  Literally on our doorstep is the Barlow potato, you can’t beat it for making our smooth mash or crisp but of course fluffy herby duck fat roasties!  Nick Horsley really does produce quality spuds and we can’t wait to get each year’s new crop after summer! The star of the show for our Sunday roast is the roast beef, sourced just up the road from Highfield House Farm. A well-established family business which has won too many awards to mention.  Working with their exceptional cuts of meats is a real pleasure.  Building relationships with suppliers is important and what drew me to Country Fresh is their experience of working in the catering business before switching to being a supplier and their endeavour to help us as much as possible. They understand about seasonality – something I very much believe in!  You will never see asparagus on our menu apart from in spring when we champion beautiful fresh English asparagus. 

Local produce and vegetables

Woodthorpe Grange Farm in Tupton supply us with Milk and cream and sometimes even their own blue cheese which is fantastic. We get all this directly from the farm and it still tickled me that once we had to wait for the cream to cool before we could get a delivery that day, it’s that fresh! Who would also know we have a world expert on tea and coffee just a few miles away. James Pogson, the president of the UK Tea and Infusion Association and the third generation of Pogson’s in the business advises on the best blends of tea and coffee around. James is captivating with his unbelievable knowledge and he even does speeches and conferences for presidents and other world leaders. Northern Tea merchants is definitely worth a visit. Of course we can’t get everything local – you may have noticed it’s a fair distance to the sea from Derbyshire! When I set up No.6 with Paul Ainsworth a few years ago we built a great relationship with Johnny Godden from Flying Fish Seafoods who was also just starting out in business.  Johnny is the best and he has an amazing company. Seeing their business grow from strength to strength has given me great pleasure and their quality of Cornish day boat fish really is second to none. They deliver to most of the finest Michelin starred restaurants in the UK and us. So all in all we have a great starting point with fabulous ingredients and a talented team with drive and enthusiasm to create some delicious dishes!  A real winner!
